In a skillet heat oil and fry the garlic, onion
and chopped celery.
Add crushed pepper in (desired quantity).
When everything starts to brown add the pancetta
and cook for a few minutes.
Meanwhile, rinse the lentils and put them in the pot,
with rice, barley, and tomatoes. Cover with vegetable stock,
put a lid on the saucepan and simmer over low heat
for half an hour, stirring occasionally
and adding more broth if soup is too dry. Season with salt.
Once cooked, sprinkle with chopped parsley, stir, turn off the heat
and let stand for ten minutes.
