It feels good to revisit familiar foods...
The food that we eat extends our experiences and our memories to all five of our senses. This must be why our meals are a part of so many of life's memorable events.
Tomato, mozzarella and basil salad
The Caprese (salad in the style of Capri) is an easy, classic salad which is usually served as an antipasto (starter). The key to success with this salad is to use the very best ingredients you possibly can. When you use tomatoes at their peak, good quality mozzarella, balsamic vinegar from Modena, olive oil and fresh picked basil, it’s truly a special dish. The tri-colored combination of tomatoes, mozzarella, and basil is a salute to the Italian flag.
1 large ripe tomato, sliced into 8 slices
8 ozre fresh mozzarella, sliced into 8 slices
6 Kalamata olives
6 Green olives
5 basil leaves, whole
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
sea salt and freshly ground pepper
Tuscan bread, sliced
Place sliced tomato on a large plate or platter. Whisk together olive oil, vinegar and salt and pepper. Top tomato slices with mozzarella and then drizzele olive oil and balsamic vinegar over all the slices. Spread basil leaves evenly over all slices and add the olives around. Toast bread on both sides then drizzle top with a little extra virgin olive oil. Make it a meal by adding thinly sliced prosciutto!
