Mushrooms ...

For years "fungi" have been thought to be heart healthy and immunity boosting. Now science shows that mushrooms may even help prevent breast cancer by lowering estrogen levels, says Shiuan Chen, PhD, professor and chair of cancer biology at Beckman Research Institute of City of Hope in Duarte, California. Mr. Chen found that when postmenopausal women consumed 13 grams of mushroom powder (the equivalent of 11/3 cups of white button mushrooms) per day for three months, their estrogen production dropped by 27%.

Try the recipe for this soup with mushrooms of the woods 
(porcini or  fresh chanterelle mushrooms).

Creamy soup with mushrooms and potatoes ...


500g potatoes 
200g rich cream 
400g mushrooms 
1 large onion 
2 tbsp olive oil 
1 tbsp flour 
50 ml of  chicken broth 

The preparation:

1 Cut the potatoes into cubes. Clean the mushrooms and cut them into strips. Peel the onion and chop coarsely.

2 Heat the oil in a saucepan and sauté the onion and mushrooms. Sprinkle with flour, add the broth and let reduce.

3 Add the diced potatoes and rich cream to the soup. Let the soup simmer over medium heat and allow to melt the rich cream, stirring constantly.

4 Season to taste with salt and pepper and finish with fresh herbs.
